The Radishes of Spring
/They're pretty. They're sassy and sharp. A radish is alluring in its compact shape and surprises us with that first bite. They are the essence of spring.
They are one of the root vegetables first up giving us hope for the future of our garden's delights. They give substance to salads, taste great with butter on an open sandwich and balance out the flavors and aid digestion in spicy Mexican dishes. But they are simple and divine and display themselves beautifully all on their own, too.
