Love A Beet This Spring

There is not much middle ground when it comes to beets.  Most love them or hate them.  I am in the former category.  If you are a beet hater, here are some reasons to have a little love for the beet.

Why You Have To Love A Beet This Spring

According to traditional Chinese medicine, root vegetables such as beets will do much for you and your liver in spring.  Beets aid in digestion, protect the liver, level out blood sugar, help lymph drainage, and promote urination.  Not to mention, if you eat enough of them, you will pee pink! 

Can't Handle Red?  Then Mellow with a Yellow

Golden beets can be just as sweet and little less intense than its red cousin.  Boil, slice and serve with olive oil, vinegar, lemon, and parsley over couscous.  Eat cold or hot.  Check out one of our favorite yellow beet recipes at an earlier post entitled "Beets in the Box!"
